What are chickpeas?
The chickpea is an edible legume from the pea family and has been cultivated for more than 8000 years. The popularity of chickpeas has increased significantly in recent years, and not without reason. They are rich in fiber, protein, iron and vitamin B, making them an excellent plant-based meat substitute.
Chickpeas can be used as a vegetable, meat substitute or source of slow carbohydrates. Their mild, nutty taste makes them suitable for both hot and cold dishes.
Preparation
Preparing dried chickpeas is easier than it sounds. Soaking is not necessary for a new harvest, but it is recommended for an older harvest. Ideally, start the evening before.
- Rinse chickpeas thoroughly
- Place in a pot and add three times the amount of water
- Soak chickpeas for 8 to 12 hours at room temperature
- Use the soaking water as cooking water for extra flavor
- Cook chickpeas until tender in 45 to 60 minutes
- For soft chickpeas, for example for hummus, cook for 1 to 1.5 hours
Storage
Dried chickpeas have a long shelf life. Store in an airtight container in a cool, dry and dark place. They will keep for up to a year and retain their taste and nutritional value.
