What are Runner Beans?
Runner beans are known for their firm texture and full, creamy flavor. They belong to the legume family and originally come from South America. They have been popular in the Netherlands and Belgium for years. Thanks to their rich nutritional value and firm bite, runner beans are ideal as a meat substitute in a variety of dishes.
Preparation
In the Netherlands, we mainly know white beans from the famous dish "white beans in tomato sauce", but they can be used in many more ways. For example, use them in stews, salads, or soups.
- Rinse beans thoroughly with cold water
- Place in a pot and add three times the amount of water
- Soak beans for 8 to 12 hours at room temperature
- Use the soaking water as cooking water for extra flavor
- Cook beans until tender in about 90 to 120 minutes
After cooking, the beans are also delicious briefly roasted, which makes for a nutritious and tasty snack.
Storage
Dried runner beans keep well for a long time. Store in a cool, dry, and dark place in a well-sealed jar or bag. This way, they will last up to a year and retain their quality and flavor.
