What are organic mung beans?
Mung beans are small, oval green beans with a light stripe on their skin. They originate from India and have been used for thousands of years in Ayurvedic and Chinese cuisine, and for good reason. They are easily digestible, rich in protein, and cook faster than most other beans.
In Germany, they are perhaps best known as the bean from which bean sprouts are made. But there's much more you can do with them. From curries and soups to dal and rice dishes — mung beans are more versatile than you might think.
Unlike canned beans, they contain no salt or preservatives. You prepare them exactly how you like.

What do you use them for?
Mung beans are particularly versatile. They are excellent for Indian dal, Thai curries, stir-fries, soups, and stews. Since they cook relatively quickly, they are also ideal for weekday meals with minimal preparation.
Want to sprout them? Then you'll have your own fresh bean sprouts within three to four days. Crunchy, nutritious, and ready to use in salads, stir-fries, or as a topping on bread.
Preparation
Mung beans require less soaking time than most other beans. Want an even shorter cooking time? Then soak them overnight.
- Rinse beans thoroughly with cold water
- Place in a large pot and add three times the amount of water
- Soak for eight to twelve hours at room temperature
- Drain soaking water and use fresh water for cooking
- Cook beans until tender for twenty to forty minutes over low heat
Tip: add a pinch of cumin during cooking to make them even easier to digest.
Sprouting
Mung beans are excellent for sprouting into bean sprouts.
- Soak overnight in plenty of water
- Drain and place in a sprouting jar or sieve
- Rinse twice daily with cold water
- After three to four days, the sprouts are ready to eat
Store sprouted mung beans in the refrigerator and use within three days.
Storage
Store dried mung beans in a tightly sealed jar or bag in a cool, dry, and dark place. They will keep for up to a year. Avoid moisture, light, and heat to maintain quality.
